Ingredients
5 tablespoons butter
5 large Granny Smith apples (approx. 8 cups)
2/3 cup brown sugar
3 tablespoons water
1 table spoon cinnamon
1 tablespoon cornstarch
6 large croissants sliced and cut into squares
6 large eggs
2 cups milk
1 1/2 teaspoons vanilla extract
1. Combine eggs, milk and vanilla. Set aside
2. Peel and slice apples approx. 1/4" thick
3. Melt the butter in a frying pan and add apples, brown sugar, cinnamon, and water. Cook on medium heat for about 8 minutes or until apples are slightly softened. In a separate brown, combine cornstarch and 1 tbsp water to create a slurry.
4. Push the apples over to one side of the pan, turn the heat up to medium high and pour some of the corn starch mixture into the boiling liquid until it thickens. Depending on how much liquid was in your apples, you may not need all of the slurry.
5. Spread apple mixture into a 9x13 pan. Top with 1/2 of the croissant squares and spoon 1/2 of the egg mixture over the bread. Top with a second layer of croissant squares and remaining egg mixture. Cover with foil and refrigerate overnight.
IN THE MORNING
1. Remove the pan from the refridgerator while preheating the oven to 350ºF
2. Bake covered for 35 minutes. Remove foil and bake an additional 10 minutes or until the bread is firm. Remove from the over and let cool for 10 minutes. Invert into a pan, cut and serve!
Optional toppings: We like to serve ours with reduced apples cooked with brown sugar, caramel drizzle, a dollop of cream cheese, and pralines!
